Hard-boiled egg with blue cheese sauce served with potatoes and cauliflower (*)


Portions for 1 serving:

1 egg

2 slices of bacon

1 potato

8oz of cauliflower

Corn oil


5 tbsp heavy cream

1/2 oz blue cheese (Bleu d'Auvergne)

Peel the potato, cut it in 1" pieces and steam them for 10mn. Then add the cauliflower and steam for another 15mn.

Put cold water in a small pan, add the egg and bring to boil. Stop the heat after 12mn if you like the yolk not too cooked or after 15mn if you like the yolk to be hard.

Put another small pan on low heat and add the cream and the blue cheese cut in small pieces. Stir until the sauce starts boiling and remove from fire.

Arrange the egg, potato and cauliflower on a plate and pour the blue cheese sauce over all ingredients.

Very good recipe!!! the blue sauce goes very well with the cauliflower and the potato.

I tried with a slice of bacon but it is too tasty. To try with a slice of ham.
